So what's Isan food?

ISAN (อีสาน) is the northeast of Thailand, and its food is the loud one. Lime, chili, fresh herbs, fish sauce, charcoal. Sour and salty first, and as hot as you ask for.

Isan food is built for a full table and nobody in a hurry. Salads, something off the grill, a basket of sticky rice, everyone reaching in. That's what makes it a culture and not just a cuisine.

ZAAP (แซ่บ) is the Isan word for ‘delicious’. It's half our name, and the standard we cook to.

The MICHELIN Guide gives a Bib Gourmand to restaurants serving exceptional food at a moderate price. We opened in January 2022 and had one by May 2023, and we've held it every year since.

Sixteen months. We're proud of that. But nothing changed in the kitchen the day it arrived. Same recipes, same herbs, same people at the stove. That's the part we're proudest of.
